Super Easy 3 Ingredient Home Made LCM’s

If LCM’s are a family favourite in your household, then you have to try this super easy 3 ingredient home made LCM recipe. When I say super easy, I mean from start to finish the whole process takes about ten minutes.

I first discovered this particular recipe when I was making my son’s birthday cake. This year he requested a cake of himself sitting on the couch playing play station. I usually mould my figurines out of fondant icing, but this time I wanted to try something different. In all of the baking shows on TV they talk about easy “rice crispy treats” to use as a basis for any structure. So I made these easy rice crispy treats and moulded a skinny little human that I had every intention to cover with fondant icing and bring to life like a delicious small nosed Pinocchio.

Although tragedy struck, and I dropped play station Pinocchio cutting his head clean right off. He also lost a leg in the incident. After I finished swearing and cursing the sugar God’s, I decided to make the best out of a bad situation. I popped that head and leg right in my mouth and discovered how delicious rice crispy treats really are.

I called the kids over and asked them to try the remainder of the mixture. They were beside themselves that I had made LCM’s!

It’s not what I initially set out to do, but because I was the champion in my household at that very moment I reveled in the glory and promised to make more of these awesome things to pop in school lunchbox’s.

So I did. Here is the recipe so you too can be a champion in your household. Less crap in them than the store bought ones and much cheaper too. Not sugar free, by any means but it’s a treat, not a staple. Enjoy!

Super Easy 3 Ingredient Home Made LCM’s:

Ingredients:

110 grams of butter or 1/4 cup

2 packets of those mini marshmallows or 4 cups

5 cups of rice bubbles

Method:

Melt butter in a large saucepan over a low heat. Be careful not to burn or over cook. Add your marshmallows and stir until well blended. Cook for an extra 2 mins while stirring constantly.

Take the mixture off the pan and add rice bubbles. Work quickly here because once it dries it sticks to the pan and it’s a bitch to get off. Soak the pan in hot water for a bit if it does end up sticking.

Flatten the mixture in a tray lined with baking paper. Use the back of a spoon to help smooth out.

Eat half of the mixture before it even cools down and begin the self loathing process. Start again so that you actually have some for the kids when they come home from school.
